A day in our lives

Our day starts pretty early I wake up at 4 and get dressed for work. I walk up to catch the taxi to the taxi rank where I catch another taxi close to work. I then get off and walk about 500m to work. I normally start work at 07:30 but get there by Six. I leave work at 05:30 where I walk up to the taxi rank and wait for a taxi to Alexandra taxi rank where I get on another taxi to go home I normally get home by seven. At that time Tristan will either have dinner cooked or will cook dinner sometimes he just makes a toasted sandwich. I watch T.V and go to bed by 09:30 to start again. Our weekends are different we wake up late go and buy food and really try to relax.

A Day in Tristan’s life is different. He wakes up to help me to get ready, then gets ready himself for college, once he is ready he walks to college where he sometimes spends most of his day, after college he walks home to do some chores and start preparing dinner, whilst dinner is cooking he studies for the next day of college, once dinner is cooked and he is done studying he waits for me to get home while he waits for me to get home he normally continues studying once i am home we have dinner and watch our favourite tv shows then go to bed.

This is us

We realise we never properly did an introduction post when we started this blog. The blog is done by a mother son team who love food.

When we started this blog a few years back we did not know much about blogging but have learn’t more about it along the way. We have not always been able to post as much as we like but we are challenging ourselves to get better and be more active.

Here is a little bit more about us :

My name is Kerry Mackenzie and I am the mother and i am a single mom to a twenty year old boy who loves to cook.I love singing, eating, taking pictures, movies and walking. I love looking for specials and learning about Social Media. I have become a Youtube addict and is often referred to as Miss Bossy in the blogs and I have a full time job.

Tristan Mackenzie is my son and he is currently studying hospitality management and next year he will be studying to be a chef. He loves to cook and come up with new recipes. He loves watching movies mostly action, cooking, music,soccer,rugby,walking and Church.

We both live in Johannesburg South Africa and have lived here all our lives.

This is us and this is our journey so follow us as we take you through it. We have a lot of exciting posts coming up.

Easy peppermint crisp tart

In South Africa we celebrated Freedom Day yesterday. It is a day were we celebrate our countries past and future and show that we are grateful for all the struggle icons like Nelson Mandela. They gave us our freedom. We chose to celebrate in the best way South African’s Know how by Braaing.

We chose to celebrate by doing a shopping haul at pick n pay Hypermarket Norwood Mall, then by braaing and making a South African Dessert.

Easy Peppermint Crisp Tart

2 x Cups Fresh Cream

2 x Packets of Tennis Baker Biscuits

400g Peppermint Crisp Chocolate Bars Grated

1 x Can Nestlé Caramel Treat

Method

  1. Place the Tennis Biscuits in rows at the bottom of your desired dish.Ensuring that the bottom of the dish is covered.

  2. Place the caramel treat in the mixing bowl and mix until smooth.

  3. In a separate mixing bowl whisk the cream until stiff peaks form being careful not to over whip.

  4. Add the whipped cream and 100 grams of grated peppermint crisp chocolate to the caramel and combine well.

  5. Spread a generous amount of mixture over the tennis biscuits and spread evenly.

  6. Add another layer of Tennis Biscuits and caramel mixture and then repeat this process until dish is full.

  7. Sprinkle the remaining peppermint crisp over the top and place in the fridge to set for one hour.

  8. Serve with a dollop of cream or as desired.

Pilchards and Rice Recipe

We are on a mission to try and eat healthy and this was one of our recipes we made.

Pilchards and Rice

1 x tin pilchards
1 x Avocado cut up
1 x Pineapple peeled and diced
1 x Tbsp Rajah Curry Spice (or any Spice)
1 x Tbsp Tumeric Spice
Cheese ( however much you want).
Rice ( 500g if u want leftovers or 250g if you don’t).

Cooking
1. Take the pilchards as per the tons instructions.
2. Add all other ingredients and cook until cheese is melted or pineapple and Avocado has softened.
3. Prepare rice as per packet instructions.

Paddlepop fruit ice cream because who doesn’t love ice cream and fruit.

Mince vetkoek because I love vetkoek and the combination of mince and vetkoek is just perfect.

Pineapple pizza because it is just the best pizza in the world and yes pineapple does belong on a pizza.

Stir fry with noodles because it is an addiction I cannot get rid of.

Swiss roll because it is something that a lot of people love.

Peanut butter because in my opinion it is the best spread in Paddlepop fruit ice cream because who doesn’t love ice cream and fruit

Mince vetkoek because I love vetkoek and the combination of mince and vetkoek is just perfect

Pineapple pizza because it is just the best pizza in the world

Regina Pizza because Mushroom on Pizza is out of this world.

Magnum Almond Ice Cream. Who doesn’t love chocolate ice cream and Nuts.

Macaroni and Cheese as it is the ultimate pasta dish.

Bovril. It is the bestest spread in the world better than Peanut Butter.

French Fries. There is nothing better than a good French Fry.

Vetkoek Cheese and Chips. Verkoek is incredible and cheese and Chips just makes it better.

The other day Miss Bossy was feeling for samp with Mushroom Sauce. She bought everything I would need to make it. She also bought me J’Something’s new cookbook called something cooking for this of you who don’t know J’Something is the lead singer for a South African band called Mi Casa. He is also a restauranteur and wannabe chef. I found a proper recipe for samp and beans in his cookbook and made my own recipe. It came out really good. You can checkout the recipe below.

Umngqusho

500g dried samp and sugar beans mix

1 tsb Olive Oil

Cheese Seasoning

Cheese Seasoning

1 packet Mushroom Sauce

2 litres Chicken Stock

¼ cup of Butter

Method

  • Place the Samp and Beans in a large bowl and cover with water to soak preferably over night when ready to cook pour out the water and set aside.

  • Place the oil in a large pot on medium heat add the chopped onion and sauté until soft add the damp and beans and coat in the oil.

  • Add the chicken stock, cheese seasoning and mushroom sauce and allow to cook on low to medium heat until desired softness.

  • Add the butter, check for seasoning and stir then remove from heat and serve when ready.


The Bread that Started it All

The first bread I learn’t to make was Cornbread. It was incredible but had too much sugar in it however it was the bread that started it all. I have since made peanut butter bread, chocolate bread ec

The recipe is as follows.

Ingredients

500g flour
250g cornflour
350ml plain yoghurt
500g creamed sweet corn
1 teaspoon of baking soda
Half a cup of sugar

Method

Add the flour cornflour baking soda sugar and yoghurt mix together while adding the sweet corn
Put in the oven at 180 degrees and bake for 20 minutes once done leave to cool and enjoy
